With summer around the corner and the city heating up, blueFROG Bombay has launched its new menu with a wholesome soup and salad selection, aromatic spices and an entirely new and exotic repertoire of dishes that will be sure to excite the palate and leave one wanting more, no matter what the season!
Of course some of the signature dishes have been retained like the Legendary blueFROG burger, the Frog galowti, baked brie (always a favourite) and the burnt garlic pepper shrimp. Some interesting additions are baby jalapeno poppers with white cheddar, crispy pork belly with braised cabbage, chilled tomato gazpacho consomme, beetroot, chive goat’s cheese and arugula salad, poached seafood salad, three mushroom rotelle on cherry tomato coulis, aromatic seafood stew (Salmon, rawas, shrimp, clams, squid), Old fashioned potato chop (Oat crusted potato and minced lamb patty), French pork chops with potato pie and lots more. The emphasis is on keeping the flavouring light and fresh and letting the core ingredients speak for themselves.
The thought behind the new menu rests almost entirely with the tastes of the clientele. blueFROG’s core clientele being so diverse due to the various different genres of music performed here, the menu had to be broad enough to cater to varying palates. The style of cooking has more of a focus on brasserie cooking – Modern European with Asian elements and textures added in. For the barflies there is an extensive appetiser and bar snack selection as well.

Chef Vikram Deshmukh, Executive Sous Chef
Vikram Deshmukh started his career under chefs Rahul Akerkar and Nitin Kulkarni at Indigo where he found and developed his love of contemporary fine dining. He moved onto the Grand Hyatt Bombay where he honed his skills in banqueting operations. He was then Chef de Partie at the Park Navi Mumbai where he worked with celebrity Italian chef Antonio Carloccio. He has been developing the highest quality of contemporary food for blueFROG for the past three years.
Chef Vikram Pardeshi, Sous Chef
After graduating from Institute of Hotel Management- Goa, Vikram started his career as a commis chef with Grand Hyatt Mumbai at the Italian Fine Dine restaurant ‘Celini’ under
Italian Head Chef Fabio Mariella. He then worked as a Demi Chef de Partie in a Michelin Starred Restaurant in London ‘1 Lombard Street’ under Austrian Chef De Patron Herbert Berger and Head Chef Tim Richardson. He has also worked as Chef de Partie at the J. Sheekey Restaurant and Oyster Bar in London which is a Zagat awarded seafood restaurant headed by Chef Richard Kirkwood. He joined blueFROG on his return to India and has been assisting Chef Deshmukh on the development of the new menu.

Grammy Award winning DJ and Producer David Guetta recently rocked Gurgaon and later made his way to the blueFROG for a quiet evening with friends. He checked out the club for a while, posed for pictures and then entered Azimuth Chefs’ Studio, the restaurant owned by the same people behind blueFROG and had a quiet, leisurely dinner there.
Meanwhile fans outside the restaurant were in a frenzy trying to get a look at the artist.

Australian Chef Matthew Wild who has cooked for the likes of Michael Jackson, The Rolling Stones, Madonna and Elton John is in Mumbai and creating a special star studded menu for the Lakme India Fashion Week Opening Party at blueFROG on March 1st.
Chef Wild has also created the first menu for Azimuth Chefs’ Studio in New Delhi which is owned by the people behind blueFROG. The restaurant is a high standard dining experience with a seasonal menu that will change every 3 months and which will be created and headlined by internationally respected visiting Chefs.
The LFW menu in will also be a sneak peak into a larger short menu specially created by Chef Wild that will be running at blueFROG Mumbai between March 3rd and March 10th. The Fashion Week party menu includes some gastronomic wizardry by Chef Wild and will be a treat for the tastebuds! The short menu he has prepared will also carry his signature seafood broth.

ABOUT MATTHEW WILD
Wild is trained in modern French cuisine. He is known for developing creative and innovative cuisine that has earned him an excellent reputation and a loyal following. He has an exceptional service record at noted establishments. He won two Chef Hats (the Australian equivalent of Michelin stars) as chef de cuisine at Finn’s. He then opened his own restaurants, Wild about Food and Restaurant Wild winning best new restaurant in Australia as well as many other accolades.
Over the last five years Wild has travelled the world as chef in residence at a range of Michelin starred restaurants such as Marco Pierre White’s Escargot, and Picasso Room, The Square, Pied à Terre and Nobu.
He then opened Soho House in Berlin and worked in the London, New York and Los Angeles establishments. He has been guest chef for many celebrity dinners including Michael Jackson, Elton John, Madonna and the Rolling Stones.
“I have fallen in love with India, its food and its people. I will be reflecting on this experience for a long time and look forward to how it feeds into my menus. I think I have found my second home!” Matthew Wild.

Some of you may not know this but, blueFROG is serving up a tasty sampler of the burgeoning INDIE MUSIC scene on the Jet Airways in-flight channel. Featuring tracks, such as ‘Splitsvilla 4 Theme Song’ by Agnee, ‘Conscious’ by Dhruv, ‘Fly’ by Indus Creed and ‘Control’ by Jalebee Cartel to name a few; whilst Ashu, Ankur Tewari, Louiz Banks and Bandish Projekt round off this stellar compilation. A special treat for music lovers! The growing popularity of live music has lead to these bands becoming household names.
Dharavi Rocks is a joint project between Acorn Foundation and blueFROG, Mumbai, connecting the educational and ‘fun’ aspects of music to important environmental issues. Call it ‘Education through Recreation’. blueFROG has, over the last year, been conducting workshops called ‘Dharavi Rocks’ with the children from ACORN (children from the rag picker community in Dharavi), other NGOs and local and International schools; and various artists from all over the world who perform at blueFROG. The workshops comprise vocal exercises and creating musical instruments from scrap material, culminating in the kids and artists performing together.
The MISSION is to give kids a voice by initiating them into music, bringing positive creative experiences into their lives and creating a bond between communities (we bring together kids from marginalised and affluent communities to gain an understanding of each other).
We believe that music makes a difference. It educates, improves learning skills, self-discipline, self-confidence, encourages teamwork, improves social skills, temperament and community life.
The next Dharavi Rocks is with super fun Colombian band Banda la Republica who will be teaching Latin grooves to the kids.

blueFROG has launched Titi Robin’s new album “Laal Asmaan” in India (recorded, mixed and mastered in the blueFROG studios).
“Laal Asmaan” is part of Titi’s Triptych project spread over India, Morocco and Turkey. He’s worked with local musicians in each with the end result being 3 CDs, specific to each country. This package will ultimately be released by French label Naïve as a 3 CD Box.
