Executive Chef

Functional Competencies

  • Menu Development & Planning (should be highly innovative and creative with special emphasis on presentation)
  • Undertake research and development of new food products and dishes in conjunction with company initiatives
  • Implement new menus based on guest feedback and ingredient availability
  • Ensure compliance with all food policies, standards and procedures
  • Recognise superior products, presentations and flavours
  • Create and maintain purchasing and food storage standards
  • Calculate accurate theoretical and weighted food costs
  • Create and maintain all standard recipes
  • Train staff on menu items including ingredients and preparation
  • Human Resource Management
  • Sales & Revenue Management
  • Focus on Brand Development
  • Participate in MIS Reporting

Chef De Cuisine

Functional Competencies

  • Reports Directly to the Executive Chef/ Sous Chef
  • Prepare and order all items on a daily basis for the restaurant
  • Responsible for maintaining food quality and ensuring guest satisfaction
  • Work closely with the executive chef / sous chef in menu development and presentation
  • Responsible along with the executive chef and sous chef in maintaining food and labour costs along budgetary guidelines
  • Maintain standards of hygiene throughout the kitchen and restaurant
  • Set standards and maintain food presentation quality at all times
  • Motivate staff and maintain discipline at all times

Culinary Ambassador

Functional Competencies

  • Implement excellent marketing and operational strategies in running of the restaurant
  • To be the contact point for all operational activities that involve day to day running of the restaurant
  • To train all staff on an ongoing basis and maintain the highest standards possible
  • To assist the executive chef in pairing of food and wine
  • To prepare and present weekly and monthly reports covering all aspects of operations (sales/budgets/marketing/training)
  • To provide support for all banqueting sales related functions
  • To ensure guest history databases are maintained and staff is familiarized with those
  • To ensure exceptional standards of hygiene within the premises

Qualifications

  • A minimum of 8 – 12 years experience in restaurant / kitchen management
  • Experience with International cuisine, in particular Modern European and combining different ethnic culinary traditions
  • Well-rounded work experience in Indian and International markets
  • A degree in Hotel Management or the equivalent

About blueFROG New Delhi - “the Kila”

blueFROG New Delhi is a four venue space:

  • 6000 sq ft live music venue
  • 2500 sq ft fine dine restaurant
  • 2500sq ft open to sky courtyard for all day dining
  • 10,000 sq ft terrace with unparalleled views of the UNESCO protected Qutab Minar. Will feature early evening concerts, sound and light show about the Qutab Minar and environs as well as brunches, and late night dining

A 2,500 sq ft state-of-the-art kitchen is being set up to cater to all blueFROG operated venues within the KILA. We imagine this to be the flagship of blueFROG and are looking at very experienced F&B professionals to run this space – chefs, restaurant managers, food ambassadors, sommeliers, all with a wealth of experience in diverse markets within India and outside. We expect impeccable grooming, and communication skills to cater to a very discerning clientele
